How to make a planet map?

I have to make a map for two planets. For booth two I already have an idea about what they look like, but I don't know how to draw them. They don't need to be really clear, however they should make understand the environments and see the biggest mountains and hills. So: What is the best and/or the easiest way to make the maps, without softwares? What kind of projection is the best? How can I draw the map? Thank you very much for your answers.
